Caramelized Pumpkin Seeds

When I think of carving pumpkins, there’s always a little light bulb in my head that says- pumpkin seeds. It’s one of those extra bonuses of the season. But what to do with them? Sure there’s the stand by salt and pepper and bake them, but how about something different, something new?

Well then you’ll want to try these caramelized pumpkin seeds.

They were really good. Matt brought them to his friends at the bike cart and none came home, everyone loved them.

Simple and delicious.

Caramelized Pumpkin Seeds
1 1/2 to 2 cups fresh pumpkin seeds
2 to 3 tablespoons brown sugar
butter
cinnamon
salt

1. Melt butter in non stick frying pan over medium high heat then add seeds.

2. Sprinkle with brown sugar, cinnamon, and a bit of salt.

3. Toast them in the pan, constantly shifting them around so that they roast evenly and don’t stick to the pan.

4. Put seeds on an aluminum foil and spread out.

5. Bake at 350F for 10-15 minutes. Remove and let cool before serving.
